Taco Soup

I have been making taco soup for years and it’s always a hit. G will eat an entire bowl! M is still not sure but is getting there.

For the kids I always give them a straw so they can drink the “juice” and use a spoon.

Ingredients:

-1 lb ground beef

-1 onion (chopped)

-1 bag frozen bell pepper (if this has onion, do not add more) or 2-4 fresh chopped peppers

-1 package taco seasoning (I use this)

-1 bag frozen corn

-2 cans chopped tomatoes

-2 cans black beans or a few cups of dry that you cook ahead of time.

-1 box beef broth (I use this)

-cornbread

-cheese

-sour cream

Process:

Brown meat. Combine all ingredients in a pot and cook until hot. Serve with sour cream, cheese, cornbread, etc.

You can modify this a lot to suit your needs. I don’t really follow the recipe exactly. It’s more of a guide.

I have added salsa if I have some left over that needs to get used up.

I have added tomato sauce, if I need led to use up some.

All the amounts are just suggestions. Add more/less depending on how you like it.

The last time I made it, I blended all the peppers and one can of tomatoes. I did this to make the “juice” more substantial for the kids. I don’t prefer it this way but it was good.

Usually I cook it in my Dutch Oven but I have made it in my Instant Pot, too.
