Creamy Orzo with Peas

I haven’t been cooking a lot lately. I ordered a bunch of easy stuff from Hungry Root because I have been trying to catch up on EVERYTHING!

I did make this with random stuff from around the house. I got the idea from Yummy Toddler Food and Nutritionally Sarah and kinda combined 2 ideas.

Ingredients:

  • Oil
  • One small onion chopped (I thought mine was too onion-y. Next time I will use less)
  • 5 cups of water
  • 1 heaping tablespoon Better than Boullion
  • 16 ounces of Orzo (I used this)
  • 1 cup of cottage cheese (might need a little milk, too)
  • Parmesean
  • Frozen Peas

Start by sauteing the onion in the oil. Then add the water and Better than Bouillon. Bring to a boil. Add Orzo and cook about 10 minutes until it is done.

Blend the cottage cheese. I like using the individual cups for my Ninja. If it’s not blending well, you can add a little milk.

Toss the cottage cheese in with the Orzo. Mix well. Add pea and parmesan. I used the whole bag of peas.

Sprinkle more cheese on top because… cheese is delicious.

I ate this as is but it would be really good as a side.

G never ate any because she was at school but M enjoyed stealing it out of my bowl!
