Carrot Oatmeal Muffins

This was so good! And it was a cool way to get the kids to try carrots.

Of course, I modified.

I used whole wheat flour instead of AP. Then I added 2 big scoops of unflavored protein powder.

I replaced the sugar with maple syrup.

Added an extra egg to make sure there was enough moisture for the whole wheat flour and the protein.

I have nothing against sugar and white flour. I just try to modify recipes to make them extra filling so my kids don’t get hangry.

I put them in my mini muffin pans with my scoops and baked!

It was really good. Kids and our friends ate them!
