We have a TON of basil so we decided to make pesto.
Ingredients:
Basil Leaves (remove stems and wash) We had a spider try to join the party but he was removed quickly by Hubs. But after I screamed and sprayed water on the floor…not cool
Oil (I used Avocado)
Parmesean
Spinach (I added some because I had some to use up)
Pine Nuts – I toasted them in the oven for a few minutes. Be careful! They will burn very quickly.
Garlic
Process:
I added as much basil as I could to the Blender and drizzled in some oil. I scraped down the sides and added more plus the rest of the ingredients. I added more oil as I went if it looked dry.
Once it was all blended, I froze it in silicone muffin tins (make sure you put this on a cookie sheet before you put it in the freezer). Then transferred to a freezer safe container/bag.
Tip: once the pesto is frozen, turn each cup inside out to make it easier to get the pesto out and leave it that way to wash.
