Instant Pot Tuscan Chicken

It’s been a while! Sorry!!

Here is a super easy one pot recipe to help get me back into the swing of writing.

I love this recipe. It’s easy but also has all the major food groups. So you could serve it as a stand alone meal without sides. It’s easy to deconstruct it enough for the tiny humans in the house.

Ingredients

chicken (I often use frozen)

chicken broth or Better Than Bouillon with water

garlic (powder or fresh)

Italian seasoning

spinach (fresh or frozen)

sun dried tomatoes

heavy cream

Parmesan cheese

pasta

Directions

Place the chicken, spices, and broth in the Instant Pot and pressure cook for 7 minutes.

Release the pressure and add the spinach and chopped tomatoes (this food processor worked great on the sun dried tomatoes). Mix in some cream and cheese. Once it’s heated through, it’s dinner time! You can eat it alone but we serve it with pasta.

It reheats really well too. Might even be better the next day.

If you don’t have an Instant Pot, I am sure you could do this on the stove or in your slow cooker. Just pay attention to it since I have no idea how long it takes.

Not always the prettiest but trust me. It’s delicous
