Crispy Honey Lime Chicken

I found this recipe in The Weeknight Dinner Cookbook. I checked it out at the library and was lucky enough that someone also published it online. I also made a modified version of the Creamy Kielbasa and Sausage from it.

I used thin chicken breasts because that’s what I had.

I used whole wheat flour since I didn’t have regular. I had to use extra milk for this step.

I skipped the cayenne so it wasn’t too hot for the kids.

I cooked it in the air fryer. I think I cooked it a little too long because it was a little dry.

Overall, I really liked the basic recipe. I don’t know if I didn’t do a good job spreading out the lime and honey but not every bite had both. The kids didn’t eat it. They ate the sides instead.

If I make it again, I will probably use the process but put these spices in the flour mixture and bread crumbs. Then, skip the honey and lime.

Update! I served the leftovers and left off the honey and lime. I told the kids they were HUGE chicken nuggets. G didn’t want me to cut it and she ate the whole thing! M wanted his cut up and ate a good bit with BBQ sauce.
