Chicken and Dumpling Soup

I LOVE soup. Like… it might be my favorite thing to eat when it starts to get chilly. There are so may types. Soup, stew, chili, etc. the list goes on and on. It’s so comforting when it’s cold out. If you have any good recipes, please share! I would love to try them out!

Chicken and Dumpling Soup is always a fan fav (or is it fave?) over here. I love it because it’s pretty quick (especially if you use pre-made biscuits) and it’s in the Instant Pot ( 6 qt or 8 qt)! You can make it ahead and let it stay warm (added bonus? the house smells AMAZING)!

Modifications I made:

I use whatever chicken I have. Tonight I used breasts. I have used tenderloins. It still amazing.

I don’t use the veggies they say. I just dump bags of frozen mixed veggies in and call it a day. If our garden peas and carrots are successful, then I MIGHT be willing to chop them all up.

I love making the dumplings from scratch and adding all of the dough to the IP. It’s probably too many dumplings but they are so good. They expand and soak up all the yummy broth. 10/10 recommend.

I use Better Than Bullion. I really love this brand. I have used many of their flavors. It’s so convenient and it doesn’t take up as much space in the pantry/fridge. I really like the flavor it adds to dishes. I usually use more than what I am supposed to but… it’s so good.
