More muffins! I know.. sorry. But they are a great way to send something homemade to school and I have been having fun experimenting with ways to keep G full at school.
This was originally a recipe I found in Pinterest but I heavily modified it.
2 cups rolled oats
2 cups whole milk (original recipe used coconut milk and I have used almond too)
2 eggs
1/3 cup peanut butter
1/2 cup maple syrup (I use less)
1/4 cup coco powder
1 tsp baking powder
sprinkle of salt
chocolate chips
Last time I made these I did it all in the food processor using the dough blade. I just threw everything (except the chocolate chips) in and turned it on. Probably not the best baking skills but it worked. I think I added too much milk so I threw in some extra oats. I added a super ripe banana, too. Stir in the chocolate chips.
Spray your muffin tins with oil. Scoop batter into the tin and bake at 350F. Start checking around 10-15 minutes. Depending on how liquidy they are it might take longer.
