I saw a friend’s post with this tomato soup. It looked amazing so I had to make it. It did NOT disappoint.
I pretty much followed the directions. I did add some cherry tomatoes to the pan because we needed to use them up. And I probably used “too much” cream. If that’s even a thing.
I served it with grilled cheese. I used my Mema’s Sourdough but you could use any bread.
I used my toaster oven for the roasting. My immersion blender to blend it all in the pot. And my enameled Dutch oven for cooking it all.
I serve soup with a straw, like these, for the kids. It makes it easier for them to eat!
It was really good. Definitely will make it again!
