Sweet Potato Casserole

Who doesn’t love a side dish that is really a dessert? I use the same recipe my mom has always used. It always comes out great.

-3 cups sweet potatoes (cooked and mashed) I microwave about 4 until they are soft then scoop out the insides.

-1 tsp vanilla

-1/2 cup sugar

-1 stick butter melted

-2 eggs

-1/2 cup evaporated milk. Tip: if you don’t have evaporated milk, simmer about a cup of milk until it reduces to 1/2 cup.


-1/3 cup butter (softened)

-1/3 flour

-1/2 cup brown sugar

-1 cup chopped pecans

Combine mashed potatoes with other ingredients. Pour into greased 1 1/2-quart casserole. To make the topping, lightly mix and put on the top of potatoes. This will spread when it melts. Cook at 350 until brown.


Clearly I needed a bigger dish. Whoops.
