I have been making Pecan Chicken for a while. It’s a good variation on chicken nuggets. Almost a grown up version that the kids like.
Ingredients
-Breadcrumbs
-Pecans chopped fine. I use the single serving cups for my Ninja. Just don’t turn it into nutbutter
-Eggs
-Honey
-Chicken. I use tenderloins but breasts are fine.
Mix eggs and honey. I do about equal parts honey to egg. Maybe a little less honey.
Mix breadcrumbs and pecans on a plate. Again about equal parts.
Dip the chicken in the egg and honey mixture then coat well with breadcrumbs and pecans.
Place in a baking dish and bake at 350 until the chicken is cooked through.
I really like the crust so I usually mix whatever is left with the eggs that are left over and throw it on top before I bake.
I serve it with whatever sides feel good. Mac and cheese, veggies, mashed potatoes, etc.
