I love my mom’s chili. I make it regularly and it freezes really well. I use the recipe as a guide and sometimes play with it.
-2 lbs ground beef
-2 cups onion (chopped)
-2 cups green pepper (chopped)
-4 cans chopped tomatoes
-32 oz tomato sauce
-1-2 tsp chili powder
-1 dash cayenne powder
-64 oz pinto beans
-1 can tomatoes with hot peppers
Brown ground beef with onions and peppers. Combine everything in a pot. Cook till heated through. Serve over rice, with cheese, corn bread, or sour cream.
I use red, orange, and yellow bell peppers. I have added fresh tomatoes that I chopped up or purred in the blender. More spice and less. Kidney instead of pinto. Or black beans. Or a mixture. It’s always good.
I have made it in my instant pot close to dinner time. I pressure it for 7ish minutes and it tastes like I cooked it all day.
Tonight everyone ate it! G even asked for seconds and then thirds! So you know it was good.
