We ended up with a ton of Jalapeño and Anaheim peppers. I had already stuffed some with cream cheese, wrapped with bacon, then cooked them. So, I wanted something different.
I got this recipe off of a Facebook group for gardening. I modified it a lot but it was SO GOOD.
I browned a pound of ground beef in my Enameled Cast Iron Dutch Oven and added taco seasoning.
I used fresh hot peppers. I seeded and roasted in the oven. 350F for a while. Check often because some of mine got a little over done but were still totes fine.
Once the beef was ready, I dumped the peppers on top, then a bunch of cheese (I had 4 cheese blend and cheddar so I just used that). Then I poured the milk mixture on top. I used 3 eggs, 2 cups of milk, and probably 3/4 c of flour to make up for the beef.
Then I baked according to the recipe.
It is so good! The peppers in ours ranged from mild to HOT so we were super careful feeding it to the kids. Super yum!
