Broccoli Casserole

Even if you don’t like broccoli, this broccoli casserole is so good. I think it could make anyone like broccoli.

-2 boxes frozen chopped broccoli or about 4 cups of frozen broccoli chopped up in the food processor

-1 can cream of mushroom soup

-2 eggs (beaten)

-1 cup mayonnaise

-1 cup grated cheddar cheese

-dash of salt and pepper

-1 large can mushrooms (drained and chopped)

-Ritz crackers

Cook broccoli according to directions and drain. Mix with other ingredients and place in a buttered baking dish. Sprinkle with 2-3 finely crumbled Ritz crackers. Drizzle with a little melted butter. Bake at 350 for 30-45 minutes


clearly I need to work on the topping…. and by that I mean follow my mom’s recipe.
