I was inspired to make this from a recipe I found in The Weeknight Dinner Cookbook. I checked it our from the library. I did something similar but changed it up a little. Here’s what we did.
Ingredients:
1 package of turkey kielbasa sliced (would probably be good with Italian sausage, too)
1 package of frozen broccoli
2 tbsp water
1/2 cup cream
1.5 tsp Italian seasoning
0.5-1 tsp seasoning salt
oil
parmesan cheese
1 package of pasta cooked (penne, rotini, bowtie)
Process
Heat oil in a large pan with a lid.
Add sliced kielbasa and frozen broccoli. Try to add the kielbasa a couple of minutes before the broccoli to brown it but I just did both together and it was fine.
Saute for a few minutes then add water and cover. Stir occasionally.
Wisk cream and spices together.
Once the broccoli is tender and the kielbasa is hot, add the cream. Stir
Serve over pasta with parmesan.
The grown ups enjoyed it together. The kids ate theirs deconstructed but overall it was a hit. If you have bigger kids or more, definitely double it. This fed the 4 of us with almost no left overs. If I hadn’t had a late lunch, there wouldn’t have been any leftovers.
