On my never ending journey to make baked goods for lunches and snacks that are filling, I found this recipe from Yummy Toddler Foods. I made them the first time a week or so ago when the neighbors were having a rough week and needed some love (and chocolate). My whole family likes them and so did theirs.
It’s really tasty. I modified it a little bit.
-I used the whole can of pumpkin so it pretty much doubled everything even though that’s not exactly 2 cups of pumpkin.
-I didn’t have pumpkin spice so I used cinnamon only.
-I used mini muffin pans.
-I used a little less than 1/3 of a cup of maple syrup. Probably more like 1/4 cup.
-I put the chocolate chips in the blender after everything was mixed and ran it for a few seconds. I am not a super huge fan of this modification.
This is my new blender and it worked great for this.
I, finally, bought baking scoops. The small one is perfect for the mini muffins.
These were a big hit with us and the neighbors.
