I LOVE mashed potatoes. They are so good as a side or on their own. Here’s how I make mine using the Instant Pot (6 qt or 8 qt)
I cut up potatoes but I don’t usually peel them.
Add them to the Instant Pot with about a cup or 2 of water and a big spoonful of chicken (veggie works well too!) Better than Bouillon.
Pressure cook for about 7 minutes.
I, usually, do a quick release because I don’t want to wait.
Drain a little of the liquid.
Add milk (or cream) and butter, salt, pepper, garlic, etc. Then mash/use a Hand Mixer or your Kitchen Aid Mixer. I taste test often to make sure they are yummy.
They are great on top of Shephard’s Pie!
