Creamy Pumpkin Gnocchi with Spinach and Sausage

Yay! More pumpkpin recipes! And this one isn’t a baking recipe. It was for dinner!

I reached out to a friend of mine that also loves to cook for her family and asked her for help finding recipes for pumpkin that wasn’t a baked good type thing. She came through BIG!

I pretty much followed the recipe as given. I used chicken sausage instead of pork. I, also, sauteed the garlic before adding the liquid. Instead of adding it to the liquid like the recipe says. I used more garlic than it called for by about one clove. I will use even more next time.

This was a BIG win with the grownups. The kids sorta ate the sausage and gnocchi that I set aside before adding the pumpkin. I will be making it again even if they don’t like it. I can deconstruct it a little better to fit their needs.

I think you could use the sauce on any pasta. I am thinking pasta with grilled chicken. Kinda like alfredo. Or even make this same recipe with cheese tortellini or baby raviolis.
