Slow Cooker Ranch Chicken with Red Potatoes

This was a winner. The chicken was moist and flavorful. The potatoes were soft with good flavor too. The kids both asked for more chicken. I didn’t take a picture of mine. One, I forgot. Two, I forgot …

Modifications:

-I used frozen chicken so I didn’t brown the chicken before hand. I made the potato chunks bigger so they wouldn’t cook too fast.

-I added a little chicken broth but this kinda backfired and meant there was a lot of juice when it was done.

-I think it might need 2 packets of Ranch? But that might be because of the extra juice I added. Whoops….

-I cooked mine in my Instant Pot on the slow cooker setting. Took most of the day since the potatoes were bigger and the chicken was frozen.

Overall, big hit. Will make this again!
