Scrambled Eggs

We love scrambled eggs around here. Quick, easy, filling, customizable. What more could you ask for in a food?

Here is my process:

-crack eggs into a bowl (tip: crack the eggs on a flat surface so you are less likely to get pieces of the shell in the egg), add cheddar cheese, and mix

-place your skillet on medium high heat with some avocado oil. I don’t use non-stick pans but if the the pan is hot enough, the eggs don’t stick (much).

-pour the eggs in then turn down the heat! You don’t want to over cook the eggs.

-keep them moving till they are cooked through.

If we have chives from the garden, they are a nice touch too.
